blueberry chai oat bake

The weekend was thoroughly enjoyed.

Breakfast.

Blueberry Chai Oat Bake [serves 1]

  • 6T GF oat flour
  • 3T milk
  • 1/2 banana
  • 1/3c blueberries
  • 1 large egg
  • 1/2t vanilla
  • 1t chai spice
  1. In a bowl, mash the banana until smooth and then whisk in the egg, milk + vanilla.
  2. Add the oat flour + chai spice until just combined, then stir in the blueberries.
  3. Pour into a lightly greased microwave safe bowl + microwave for about 1.5-2min. 
  4. Remove from the bowl + top.

tips/substitutions: Buckwheat flour will also work for this.  If you don’t want to use banana, sub 2.5T applesauce.  If you make in 2 ramekin dishes, they will take 30sec – 1min longer to cook.

Topped with chai spiced almond butter?  Even better.

After breakfast, walking the dogs, and starting day 1 of week 2, from Jamie Eason’s LiveFit program, we headed to my Uncle’s property up in the mountains.

Apple cider + hot cocoa were sipped.
